I was never a fan of oatmeal. I didn’t like the consistency, I didn’t like the taste. I had to add a whole lot of sugar and milk to appreciate it, which in turn didn’t make it healthy anymore.
But our busy schedule pushed us to give overnight oats a try. I brought it to work with me today as a mid-morning snack (a second breakfast I would say). I didn’t know how it would turn out but I was very surprised when it tasted so good that I even texted Michael in the middle of the day saying how shocked I am that I loved the oats. Add to the fact that we didn’t use whole milk or a million table spoons of sugar, this one is a sure hit.
Overnight oats are great because you just prepare them the night before and you can get some extra sleep in the morning because you simply just grab the jar and go. This is a big deal for people like me who dislike waking up early in the morning.
It takes less than 5 minutes to prepare. The first layer is the rolled oats, which you submerge in almond milk. Next, add the Greek Yogurt and maple syrup. Top with bananas,blueberries and chia seeds. For an extra crunch, you can even throw in almonds.
